This month we have selected Flight Coffee Co from Bedford, NH. A new and upcoming roaster, the people at Flight have been hard at work creating a supply chain that respects people and coffee from start to finish. 
Founder and head roaster Claudia Barrett seeks to tell each coffee’s story individually. While roasting she strives to bring out the unique qualities of each coffee, which come from things such as the soil, harvest, or varietal. No two coffees are the same, so no two roasts are the same.

In addition to attention to detail in the roast process, the people at Flight Coffee Co are incredibly particular about the coffee-sourcing process. They have partnered with their friends and importers at Coffee Shrub to ensure that the money they pay for coffee is getting back to the farmers. Coffee Shrub uses a process they call the Farm Gate – when negotiating coffee prices with farmers they will always tell them the exact amount of money the farmer will receive when it reaches the gates of the farm, so no confusing import or export fees. With people on the ground at each place they source, Coffee Shrub can always be sure the money is going directly to those responsible for the farms.
